Tabouli Salad

- 3 cups of finely chopped flat-leaf parsley (or 3/4 cp dried) shopping list
- 1/2 cup of finely chopped fresh mint (3 tbs dried) shopping list
- 1 bunch finely chopped spring onions (with the green parts) shopping list
- 4 or 5 ripe, medium size tomatoes, chopped into small cubes shopping list
- 2 cps of medium burghul (cracked wheat) shopping list
- 2 cps boiling water shopping list
- 1/2 tsp allspice shopping list
- 1/2 cup lemon juice or lime juice ( l prefer lime juice) shopping list
- 1black or Greek olives, chopped fine (optional) shopping list
- 5 TBS good olive oil shopping list
- salt and pepper shopping list
How to make it
- Rinse bulgar and cover with boiling water. add 1 tsp salt and 1/4 tsp pepper. More if you like Refrigerate at least 1/2 hr. Chop parsley, mint, tomatoes, onions and olives. Add to bulgar. Add lemon or lime juice and olive oil. If you don't have olive oil a light cooking oil will work. If to dry add a little more juice and 1 more tbs olive oil. Refrigerate at least two hours. Serve on lettuce leaves or as a filler in Gyro sandwiches. Yum!!

This is good stuff. I make tabouli occasionally. I haven't used olives before, but I like them in just about anything. I'll have to give it a try. I also put a little vietnamese cinnamon in mine.
