Homemade Mushroom Soup

- 1 lb assorted mushrooms shopping list
- 1/4 cup chopped onion shopping list
- 1 clove garlic minced shopping list
- 3 tbsp butter shopping list
- 4 tsp flour shopping list
- 4 cups beef stock shopping list
- 1/2 cup whipping cream shopping list
- 2 tsp chopped fresh thyme shopping list
- Dash hot sauce shopping list
- salt & pepper to taste shopping list
How to make it
- Cook mushrooms, onion and garlic in butter, until all are lightly browned.
- Stir in flour and stock.
- Cook and stir until boiling.
- Reduce heat
- Simmer, covered for 15 minutes, stirring occasionally
- Process mushroom mixture in a blender (half at a time) until smooth
- Return to the saucepan.
- Stir in cream, thyme and hot sauce.
- Cook and stir until heated through.
- Season with salt and pepper.
- Serve
