MVP Tex Mex Bake

- 1 bag instant rice shopping list
- cooking spray shopping list
- 1 can (10oz) diced tomatoes and green chilies shopping list
- 1 lb ground beef,browned shopping list
- 4 c tortilla chips shopping list
- 1 can (15oz0 seasoned pinto or chili beans shopping list
- 1 lb paterized prepared cheese product (such as Velveeta) cut ito cubes,divided shopping list
- 1/4 c green onions,sliced shopping list
- garnish with green onions and guacamole when served shopping list
How to make it
- Preheat oven to 350 degrees. Spray a 9x13" baking dish with coking spray.
- Prepare rice according to directions;set aside
- In med. bowl,combine cooked rice,diced tomatoes,green chilies and ground beef;set aside.
- Cover baking dish bottom with tortilla chips. Layer half of the cheese over the tortilla chips. Top with beans and rice-tomato-beef mixture. Top with remaining cheese.
- Bake,uncovered for 15 mins or till cheese is melted. Garnish with green onions and guacamole,if desired.

It is still good if you use TVP instead of the ground beef and then you have a vegetarian MVP!!
Textured veggie protein frozen crumbles are great in dishes like these and Fred never knows the difference. Good recipe. Week night meal for us.notyourmomma in South St. Petersburg loved it -
