How to make it

  • Preheat oven to 400 degrees.
  • spray a rimmed baking sheet with non-stick cooking spray
  • Place chicken between 2 sheets of plastic wrap/pound until 1/4 inch thick
  • in large bowl,combine the egg whites,cornstarch,and lemon juicewhisking until combined.
  • in a shallow dish,combine pecans and breadcrumbs.
  • Dip chicken breasts in the egg white mixture.
  • dredge chicken in pecan mixture,shaking off excess.
  • let stand 15 minutes.
  • in a large skillet,melt butter over medium-high heat,add chicken
  • cook for 2 minutes on each side,or until browned.
  • place chicken on the prepared baking sheet
  • bake 5-7 minutes until it is cooked through.
  • Prepare sauce:
  • in a small bowl,combine cream and rosemary.
  • bring to a boil over medium-high heat.
  • reduce heat,simmer until cream is reduced to1/2 cup.
  • Stir in the mustare and salt.
  • Serve over chicken.

    Very nice coating for the chicken. I'm not overly fond of rosemary...may make a different sauce, but the chicken coating is a definite must try!!
