How to make it

  • Mix the flour with 9 oz (250 ml) of water to make a dough.
  • Dissolve sugar in a little water.
  • Beat eggs and mix with sugar and vanilla extract.
  • Stir into dough.
  • Knead the batter until smooth and elastic.
  • Turn onto greased surface and roll into a long roll and cut into 10 round pieces.
  • Roll each piece into a small strip.
  • Fold each strip double and twist into a yarn-like stick.
  • Heat oil in a deep wok to about 230 degrees.
  • Deep-fry dough twists slowly until lightly browned and crisp.
  • Remove, drain well, and serve.
  • I like to sprinkle a mixture of cinnamon and confectioners' sugar over these.
