Ingredients
  • Potatoes
  • Indian Green Chiles or small Thai peppers or any kind of pepper you want
  • Sea Salt - 1-2 tsp
  • Coarse ground black pepper - 2 tsp
  • Garlic cloves - As much as you like
  • Onion - About 1/4 the volume of potatoes
  • Curry Leaves - 1 - 2 handfuls
  • Ghee - Enough to coat all ingredients

Directions
  1. Cut Potatoes and Onions into bite size chunks
  2. Add Garlic and curry leaves
  3. Add salt and pepper
  4. Add Ghee and toss all
  5. Roast for 30 minutes@375
  6. Stir
  7. Roast until potatoes are fork tender throughout
