Hungarian Chicken Paprikash

- 8 chicken drumsticks shopping list
- 1 pkg (2.5-3 lbs) of chicken tenderloin strips shopping list
- 2 cups flour shopping list
- 3/4 cup sweet Hungarian paprika shopping list
- 2 tsp pepper shopping list
- 2 tsp salt shopping list
- 2 tsp parsley shopping list
- 1 cup lard shopping list
- 2 Large onions chopped shopping list
- 1 large red pepper chopped shopping list
- 1 large tomatoe chopped shopping list
- 1/4 cup white wine shopping list
- 48 oz chicken broth shopping list
- 2 tbsp butter shopping list
- 1 tbsp salt shopping list
- 1 tbsp pepper shopping list
- 1/4 cup to 1/2 cup sweet paprika shopping list
- 1/4 cup heavy cream shopping list
- 1/2 cup sour cream shopping list
- Dumpling: shopping list
- 2 cups flour shopping list
- 1 tsp salt shopping list
- 1 egg shopping list
- about 3/4 cup water shopping list
How to make it
- Mix flour, 3/4 cup paprika, 2 tsp pepper, 2 tsp salt & parsley
- Heat large Dutch Oven (at least 8 quarts), melt about 1/2 cup lard
- Cut tenderloins in about 1" sizes
- Pat chicken dry and drudge pieces thru flour mixture
- Place in hot oil (lower to medium-medium high) and brown pieces
- Remove and continue until all chicken is browned (if needed, add a little more lard-do not burn bottom of pan)
- Place onion, peppers and tomatoe in pan with white wine, saute till tender
- Add chicken broth and remaining seasonings with butter and bring to boil
- Add chicken, be sure to cover chicken
- Cover and simmer on low for atleast 2-1/2 hours
- To make dumpling
- Mix egg, salt and water. Add enough flour to make soft dough
- Heat a pot of water. Add salt
- Make small teaspoons of dough and drop into water. When they come to surface, cook 1-2 minutes and remove & drain.
- When ready to eat, you will now make paprika sauce
- Remove about 2 cups of sauce and mix with 1/2 cup sour cream (room temperature) and 1/4 cup of heavy cream,
- Slowly whisk into Dutch oven.
- If you want it creamier, repeat steps.
- Serve over dumplings
- Options(you can add mushrooms to cooking)
