Feta Topped Chicken

- 4 boneless,skinless chicken breast halves (1-1/4 lbs shopping list
- 2 Tbs baslasmic vinaigrette dressing shopping list
- 1 tsp italian seasoning shopping list
- 1/4 tsp seasoned pepper shopping list
- 1 large roma (plum) tomato,cut in 8 slices shopping list
- 1/4 c crumbled feta cheese (1 oz) shopping list
How to make it
- Set oven control to broil. Brush both sides of chicken breasts with dressing. Sprinkle both sides with Italian seasoning and sesoned pepper. Place on rack in broiler pan.
- Broil with tops 4" from heat about 10 mins,turning onceuntil juice of chicken is clear when center of thickest part is cut. Top with tomato and cheese. Broil 2-3 mins longer or till cheese is lightly browned.
- You can use 1/2 tsp ea. dried basil and oregano for Italian seasoning.
- Feta crumbles are available in a variety of flavors. Some have sun-dried tomatoes,basil or cracked pepper added. Any of these would be delicious in this recipe.

I've made this many times - it is a fantastic and easy dish for quick weeknight meals. Also good with Greek seasoning if you already happen to have it in the cabinet!
