Pickled Sausage

- 2 lb. smoked sausage (I use smoked Italian but if try something else let me know how it turns out) shopping list
- 4 onions shopping list
- 1 cup water shopping list
- 3 cups vinegar shopping list
- 3/4 cup brown sugar shopping list
- 1tsp red pepper flakes (I like to kick this up a bit) shopping list
How to make it
- Mix H2O, vinegar, brown sugar and red pepper
- Bring to a boil and simmer 5 min.
- Cut sausage into bite size pieces
- Slice onions thinly
- Alternate layers of
- sausage & onions in Mason (canning) jars
- Pour hot brine over sausage & onions
- Cover and let cool
- Refrigerate for two days or so for the flavors to meld
- Enjoy!
