- For the Base: shopping list
- 1 c. butter shopping list
- 2 Tbsp. sugar shopping list
- 2 eggs slightly beaten shopping list
- 3 c. unsweetened coconut flakes shopping list
- 350 grms. chocolate graham crackers crumbs shopping list
- For Filling: shopping list
- 1/2 stick (70 grms) butter, melted shopping list
- 1/4 c. milk shopping list
- 1 tsp. vanilla extract shopping list
- 3 1/2 c. confectioner's sugar shopping list
- 2 Tbsp. instant vanilla pudding powder or custard mix shopping list
- For Toppings: shopping list
- 7 oz. (200 grms) unsweetened baking chocolate shopping list
- 2 Tbsp. butter shopping list
How to make it
- Pre-heat oven to 350F.
- Lightly grease a 9"x13" baking pan.
- For Base:
- Combine butter, sugar & eggs in a bowl and whisk until smooth.
- Add coconut and crumbs, and stir to combine.
- Prees mixture into pan and bake until firm, about 20 minutes.
- Cool completely on a wire rack.
- For Filling:
- Combine all filling ingredients in a mixing bowl and beat until creamy.
- Spread over the prepared base and chill for 30 min. in the fridge.
- For Topping:
- Combine butter and chocolate in a metal bowl
- Melt chocolate mixture over double boiler by stirring occassionally.
- Spread choc. mixture over the filling evenly and return to the fridge
- to chill until topping has hardened. cut into squares.
- Store in airtight container and keep in fridge for at least 7 days.
