How to make it

  • Pre-heat oven to 350F.
  • Lightly grease a 9"x13" baking pan.
  • For Base:
  • Combine butter, sugar & eggs in a bowl and whisk until smooth.
  • Add coconut and crumbs, and stir to combine.
  • Prees mixture into pan and bake until firm, about 20 minutes.
  • Cool completely on a wire rack.
  • For Filling:
  • Combine all filling ingredients in a mixing bowl and beat until creamy.
  • Spread over the prepared base and chill for 30 min. in the fridge.
  • For Topping:
  • Combine butter and chocolate in a metal bowl
  • Melt chocolate mixture over double boiler by stirring occassionally.
  • Spread choc. mixture over the filling evenly and return to the fridge
  • to chill until topping has hardened. cut into squares.
  • Store in airtight container and keep in fridge for at least 7 days.
