Spanish Style Chicken

- 2 Tbs extra virgin olive oil shopping list
- 2 links cured chorizo,casings removed,halved and cut in chunks shopping list
- salt and pepper shopping list
- 8 bone-in skinless chicken thighs shopping list
- 1-1/2 lbs baby potatoes shopping list
- 1 red onion,coarsely chopped shopping list
- 2 to 3 cloves garlic,finely chopped shopping list
- 4 to 5 sprigs thyme shopping list
- 1 Tbs fresh chopped oregano or 1-1/2 tsp dried shopping list
- 2 Tbs sherry vinegar shopping list
- 1/4 c honey shopping list
- 1 lemon,thinly sliced shopping list
- spash of chicken stock or water shopping list
- To finish: shopping list
- 1/4 c golden raisins shopping list
- 3 Tbs hot water shopping list
- 3 Tbs sherry vinegar shopping list
- 1/4 c chopped flat-leaf parsley shopping list
- 1/2 c pitted green olives,coarsely chopped shopping list
- 2 roasted red peppers,coarsely chopped shopping list
- 1/4 c roasted almonds,sliced shopping list
- orange and lemon peel shopping list
How to make it
- Place a large skillet over med-high heat with 2 turns of the pan of oil,about 2 Tbss. Add chorizo to pan and sear until golden brown,3-4 mins. remove chorizo and reserve.
- Season chicken with salt and pepper and sear in the same pan until golden brown,3-4 mins per side. Remove chicken from pan and reserve.
- While the meats are browning,scatter potatoes,onion,garlic,thyme,oregano,vinegar,honet,lemon slices and chicken stock in bowl of a crock pot. Season with salt and pepper. Lay the chorizo and chicken over veggies.
- Cover and cook,undisturbed,for 4 hours on high or 6-8 hours on low.
- Meanwhile,place golden raisins in small bowl and pour hot water and sherry vinegar over top. Wrap the bowl tightly with plastic wrap and let sit till ready to serve. Just before serving,drain the raisins and mix with parsley,olives and roasted peppers.
- Serve the chicken garnished with raisin mixture,toasted almonds and orange and lemon peel .
