Apple Cream Pennies

Another recipe I saved from Yankee Magazine. I haven't made these yet but thought I'd share
Ingredients
- 2 1/2 cups flour shopping list
- 1/2 tsp. baking soda shopping list
- 1/4 tsp. salt shopping list
- 1 cup dark brown sugar, firmly packed shopping list
- 1/2 cup sugar shopping list
- 1 cup butter, softened shopping list
- 2 large eggs shopping list
- 2 tsp. vanilla shopping list
- Filling: shopping list
- 8 oz. cream cheese, softened shopping list
- 1/4 cup sugar shopping list
- 1/4 cup apple butter shopping list
How to make it
- Preheat oven to 300
- In mixing bowl, sift flour, baking soda, and salt
- In another mixing bowl, beat brown sugar, sugar, and butter on medium until combined
- Add eggs and vanilla, and beat until light and fluffy
- Add flour mixture and beat on low until just combined
- Do not over mix
- Shape dough into marble size balls
- Place balls on ungreased cookie sheet, about 1 inch apart
- Bake 10 minutes (do not let them brown)
- Cool on cooling rack
- Filling
- Beat cream cheese and sugar on medium until fluffy
- Add apple butter and beat until combined
- Spread 1 tsp. of filling onto the flat side of a cookie
- Top with another cookie
- Repeat with remaining cookies and filling.
- Note: Fill cookies just before serving
