Tasty Vegetable Soup

- 3 - 14 oz. cans of red beans or other of your taste.. drained and rinsed shopping list
- 6 cups of vegetable stock or chicken or water. shopping list
- 2 cloves sliced garlic shopping list
- 1 onion chopped shopping list
- 2 tbs. olive oil shopping list
- 2 stalks celery chopped thin shopping list
- 4 tomatoes chopped small - discard seeds. shopping list
- 1 tsp salt shopping list
- 1/4 cup fresh Italian parsley chopped shopping list
- 1 cup freshly grated parmesan cheese. shopping list
How to make it
- put beans, stock and garlic in a pot
- bring to a boil ,turn heat down and simmer slowly for 20 mins.
- meanwhile add oil to a hot pan and saute onion and celery until softened
- then add salt and tomatoes ,cook for few mins.
- add the parsley and put all in with the beans
- simmer another 15 mins.
- good with French bread, spread with butter!!
