Torta Ahogada

- Sandwiches: shopping list
- 2 lbs Carnitas shopping list
- 1 white onion sliced shopping list
- 3 garlic cloves shopping list
- 2 teaspoons cumin shopping list
- 6 bolillo rolls or any hard crusty roll shopping list
- Sauce: shopping list
- 12 oz can stewed tomatoes shopping list
- 8 chile de arbol peppers, stems removed (add less if you dont want it spicy or more if you like it HOT!) shopping list
- 2 garlic cloves shopping list
- 1 lime, juice set aside shopping list
- 1 cup chicken broth shopping list
- Side: shopping list
- avocado shopping list
- limes shopping list
- pickled onions (see my recipe for them) shopping list
How to make it
- Sauce:
- Combine all the ingredients in a sauce pan over medium heat. Once boiling, reduce heat and simmer for 15-20 minutes. Make sure your pan is big enough to dip your sandwich into.
- Sandwich:
- 1. Saute onion, garlic, and cumin until soft.
- 2. Add carnitas into pan and heat through.
- 3. Pile meat mixture high onto the bolillo rolls.
- 4. Using tongs, grab your sandwich and dunk it into the sauce. Otherwise, you can ladle the sauce over the sandwiches. Serve with sliced avocado, pickled onions and limes.
