How to make it

  • Sauce:
  • Combine all the ingredients in a sauce pan over medium heat. Once boiling, reduce heat and simmer for 15-20 minutes. Make sure your pan is big enough to dip your sandwich into.
  • Sandwich:
  • 1. Saute onion, garlic, and cumin until soft.
  • 2. Add carnitas into pan and heat through.
  • 3. Pile meat mixture high onto the bolillo rolls.
  • 4. Using tongs, grab your sandwich and dunk it into the sauce. Otherwise, you can ladle the sauce over the sandwiches. Serve with sliced avocado, pickled onions and limes.

    If you make Kens from AR, I would cut them into chunks and fry them in a little oil or lard to get that crisy outside. I like to use lard instead of oil but I know some people dont like it.
