How to make it

  • Preheat oven 160c /gas 3
  • Grease and line a 2lb (1kg) loaf tin
  • Put flour and salt into a bowl, cut the butter into pieces and rub into the flour until it resembles fine breadcrumbs
  • Stir in the sugar and raisins.
  • Mash the bananas and blend into the mixture with the vanilla essence, beaten egg and milk
  • Beat until well mixed and turn into the prepared tin
  • Cook for approximately 1 1/2 hours until golden brown with a springy texture
  • Cool in the tin for 10 minutes then cool on a wire rack
  • serve alone or with butter
