Banana Raisin Bread

- 225g (8oz) self raising flour shopping list
- 2.5ml (1/2 teaspoon) salt shopping list
- 100g (4oz) butter shopping list
- 175g (6oz) dark brown sugar shopping list
- 75g (3oz) seedless raisins shopping list
- 2 ripe bananas shopping list
- 2.5ml (1/2 teaspoon) shopping list
- 1 egg beaten shopping list
- 45ml (3 tablespoons) milk shopping list
- 2.5ml (1/2 teaspoon) vanilla essence shopping list
How to make it
- Preheat oven 160c /gas 3
- Grease and line a 2lb (1kg) loaf tin
- Put flour and salt into a bowl, cut the butter into pieces and rub into the flour until it resembles fine breadcrumbs
- Stir in the sugar and raisins.
- Mash the bananas and blend into the mixture with the vanilla essence, beaten egg and milk
- Beat until well mixed and turn into the prepared tin
- Cook for approximately 1 1/2 hours until golden brown with a springy texture
- Cool in the tin for 10 minutes then cool on a wire rack
- serve alone or with butter
