Apple Zucchini Loaf - Diabetic Friendly

- Ingredients: shopping list
- 1 ½ cups all-purpose flour shopping list
- 1 cup sugar or Splenda granules shopping list
- 1 tsp. ground cinnamon shopping list
- ½ tsp. baking soda shopping list
- ¼ tsp. baking powder shopping list
- ¼ tsp. salt shopping list
- 1 Jar ( 4 ½ oz ) diced apple baby food shopping list
- 1 egg shopping list
- 1 Tbs. canola oil shopping list
- 1 cup finely shredded zucchini shopping list
- TOPPING: shopping list
- ¼ cup quick-cooking oats shopping list
- ¼ cup flaked coconut shopping list
- ¼ cup packed brown sugar or Splenda brown sugar shopping list
- 2 Tbs. butter, melted or margarine, melted shopping list
- Dash ground cinnamon shopping list
How to make it
- In a large bowl, combine the flour, sugar, cinnamon, baking soda, baking powder and salt. Drain apples, reserving juice. In another bowl, whisk the egg, oil and reserved juice. Stir into dry ingredients just until blended. Fold in zucchini and apples until moistened.
- Pour into an 8-inch x 4-inch pan coated with cooking spray. Combine topping ingredients; sprinkle over top. Bake at 350 F. for 50 – 55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Yield: 1 loaf ( 12 slices ).
