Grilled Chicken with Mustard Tarragon Sauce

- 4 (6 oz) boneless,skinless chicken breasts shopping list
- 1/2 tsp salt,divided shopping list
- 1/4 tsp black pepper,divided shopping list
- cooking spray shopping list
- 3 Tbs minced shallots shopping list
- 3 Tbs Dijon mustard shopping list
- 4 c gourmet salad greens shopping list
- 2 Tbs red wine vinegar shopping list
- 2 Tbs water shopping list
- 1 Tbs extra-virgin olive oil shopping list
- 1 tsp. chopped fresh tarragon shopping list
- 1/2 tsp sugar shopping list
How to make it
- Heat a grill pan on med-high heat. Sprinkle chicken evenly with 1/4 tsp salt and 1/8 tsp pepper. Coat pan with spray. Place chicken in pan;cook 6 mins on each side or till done.
- Combine remaining 1/4 tsp. salt,1/8 tsp pepper,shallots and next 6 ingredients (throgh sugar) in a bowl,stirring well with whisk. Serve chicken over greens with sauce.
