How to make it

  • Preheat oven 375
  • for filling:
  • in large bowl combined drained peaches cornstarch and lemon juice toss well
  • Pour into a 2 quart baking dish dot with butter 2 tbs. spoons{use square baking dish}
  • ake 20 minutes till bubbly
  • Meanwhile for topping: in medium bowl combined Flour granulated sugar baking powder and salt
  • Add Egg, melted butter vanilla stir well
  • fold in 1/4 cup coconut Dallop topping over filling sprinkle with remaining coconut Bake for 35 minutes cover with foil
  • after 0 minutes cover with foil to prevent over browining cool 30 minutes
  • Ina chilled bowl combined cream pwder sugar beat on medium high speed untill soft peeks form
  • seve warm cobbler with whipped cream
