How to make it
- Cook bacon for 2-3 minutes over medium heat in dutch oven.
- Add mier poix (onions, celery and carrots). Cook until soft, about 6-8 minutes.
- Add split peas and cook for 2 minutes.
- Add chicken stock. Bring to boil and reduce heat to medium/low.
- Cook for about 35-40 minutes. Peas will melt down and dissolve into soup.
- For finer consistency, zip with hand blender.
