Mexicali Black-eyed Pea Patties

- 1 tbsp Lite Margerine shopping list
- 1/4 cup onions, Green shopping list
- 2 cloves garlic Clove shopping list
- 1 tsp Fresh ginger Root shopping list
- 1/2 cup red bell pepper, Raw shopping list
- 1 1/2 cup black-eyed peas shopping list
- 1/2 whole lemon yiel lemon juice, Fresh Squeezed shopping list
- 1 tsp lemon zest shopping list
- 1 tsp chipotle peppers In adobo sauce shopping list
- 1/4 cup Pancake Batter shopping list
- 1/4 cup cilantro, Fresh shopping list
- 1/2 cup Plain bread Crumbs shopping list
- 1 tsp ground thyme shopping list
- 1/2 tsp cayenne pepper shopping list
- 1/2 tsp salt shopping list
How to make it
- The black-eyed peas ([1] 15.5oz can) should be drained, rinsed and make sure they are relatively moisture free. RESERVE 1/2 cup of beans.
- Heat a pan and saute the diced green onion, diced red bell pepper, minced garlic cloves, pressed ginger root on medium high until soft.
- -- note: To prepare the ginger root, cut about 1/2" of root, peel, slice thinly and press in a garlic press.
- Add the cooked veggies to the reserved black-eyed peas and mix well.
- Mince the chipolte pepper and mix into reserved black-eyed peas. Toss thoroughly.
- ---Note: DO NOT get this pepper on your hands and then touch your eyes or any other sensitive skin. Wash your hands very very well if you do touch the pepper.
- Put the remaining 1 cup of black-eyed peas into a bowl and mash thoroughly.
- Add the thyme, cayenne and salt to the reserved peas and mix again.
- Squeeze the juice of the lemon into the mashed peas, and re-mash mixing thoroughly. Grate the zest of the lemon into the reserved black-eyed peas and mix well.
- Add the pancake batter to the mashed peas and re-mash mix thoroughly.
- Add the reserved pea mixture to the mashed peas along with 1/4 cup of the bread crumbs and mix thoroughly.
- Reserve the remaining bread crumbs for coating the patties when you brown them.
- Let the mixture chill in the refrigerator for at least an hour. With the chilled mixture, divide into 4 parts, form the patties, dust with remaining bread crumbs.
- Put the patties back in the refrigerator to re-chill.
- Pre-heat oven to 350. Heavily spray a cookie sheet with PAM. Place the patties on the baking sheet and bake for 30 minutes until browned.
