How to make it

  • Place the cleaned and sliced bitter melon in a large bowl.
  • Add salt and lukewarm water. Set aside for at least 5 minutes ( this removes its bitterness, the longer you leave them the less bitter it will become ).
  • Drain the bitter melon in a piece of cloth then squeeze them tightly until all the liquid drips. Set aside.
  • Heat the cooking oil in a pan, Saute the garlic, onion and tomato.
  • Add the shrimps. Stir well.
  • Add the bitter melon and mix well.
  • Add salt and pepper to taste.
  • Beat the eggs and pour over the bitter melon. Let the eggs cook partially before stirring.
  • Serve hot.

    Bitter Melon In Eggs With Shrimp Recipe

    WARNING: Biter melon (especially the seeds) contains a compound that acts like insulin. MORE RESEARCH IS NEEDED. Biter melon may be helpful (or as I found out the hard way, very, VERY HARMFUL) for people with diabetes or a tendency to diabetes. BE CERTAIN TO SCOOP AWAY THE ENTIRE CENTER OF THE MELON: THE FIBERS CONTAINING SEEDS). DO NOT CONSUME WITH INSULIN!!! Biter melon is also harmful for people with G6PD deficiency. If this vegetable is new to you, please do your research before consuming it so you know what can happen to a very small percentage of people upon consuming this vegetable (me included). TIP: YOU CAN SEE FROM MY PHOTOS (POSTED WITH THE RECIPE) THAT I FAILED TO REMOVE THE ENTIRE CENTER OF THE MELON (MEANING I LIKELY GOT A HIGH DOSE OF AN INSULIN-LIKE SUBSTANCE THAT WAS CONTAINED IN THE SMALLER HARD-TO-SEE WHITE SEEDS). BE WARNED: THIS IS INCORRECT PREPARATION!!!

    A lot of people probably have never tried bitter melon. Being it looked like a cucumber and tasted like chayote squash. I love it and you have posted a great way to enjoy this rare treat. \0
