Generally this dish is served in Andalusia as part of a mixed fish fry, but it's wonderful on its own. The marinade makes the fish flavorful and succulent. Note: Prep time does not include marinade time.

Delicious! No halibut this week, so I used cod. The vinegar gave the fish a nice tang. The herbs were a great addition to the fish because they stuck to it and got fried up, too. I ate half of the first batch while the second batch fried! :) I think this would be a great recipe for a whole piece of fish as well. Thanks!

I made this again tonight. I used a red snapper filet and substituted fresh chopped basil for the bay leaves. Marinaded it all in a zip lock bag. It was wonderful. I think this is the perfect marinade for frying fish. I am keeping this one. Thanks for posting this. :)
