Chicken On Croutons With Olives And Onions

- 1 loaf French bread (9 to 12 oz),cut in 1" cubes shopping list
- 2 Tbs olive oil shopping list
- salt and pepper shopping list
- 1 whole chicken (3-1/2 lbs) cut in 8 pieces,skin removed from all but wings shopping list
- 1 small red onion (6 to 8 oz)thinly sliced shopping list
- 1 clove garlic,crushed with press shopping list
- 1/4 tsp dried thyme shopping list
- 1/4 tsp dried oregano shopping list
- 1/4 c pitted kalamata olives,halved shopping list
- 1/4 c packed fresh flat leaf parsley,chopped shopping list
How to make it
- Preheat oven to 425. In a 15 x 12' jelly roll pan,arrange bread cubes in single layer,without spaces between cubes. Drizzle 1 Tbs oil over bread and sprinkle with 1/8 tsp salt and 1/8 tsp pepper.
- In large bowl,combine chicken,onion,garlic,thyme,oregano,1/4 tsp salt ,1/4 tsp pepper and the remaining 1 Tbs oil. Toss till well mixed. Arrange chicken pieces in single layer on top of bread,spacing 1/2" apart;scatter onion mixture over chicken and bread.
- Roast 30 mins. Scatter olives over chicken and bread. Roast 5 mins longer or till juices run clear when chicken pierced with a knife. With spatula,transfer chicken mixture on croutons to large platter. Garnish with parsley.
