Cornmeal Griddle Cakes

- 1 1/2 cup flour, sifted shopping list
- 1/2 cup yellow cornmeal shopping list
- 4 tsp baking powder shopping list
- 1 1/2 tsp salt shopping list
- 1 tbsp sugar shopping list
- 2 lg eggs, separated shopping list
- 2 cups skim milk shopping list
- 1/4 cup vegetable oil shopping list
How to make it
- Sift flour and other dry ingredients together in a large bowl.
- Beat yolks then add them to th milk. Add oil, and whisk together.
- Add to the dry ingredients and stir just until moistened and smooth.. DO NOT Over stir. It will be lumpy.
- Beat eggs whites until stiff and fold gently into the batter.
- Pour by 1/4 cupfuls onto hot griddle. (350 f-375 f ,depending upon yours)
- Cook until edges are dry and top is bubbly, flip over until light brown.
- Hold in a warm oven until all are cooked.
- Serve with lots of butter, syrup or preserves.
