Sauteed Potatoes With Chorizo

- 1 Tbs vegetable oil shopping list
- 10 oz. Mexican pork chorizo,casings removed * shopping list
- 1 small onion,diced shopping list
- 1 lb. red skinned potatoes,cut in 1/4" dice and boiled shopping list
- kosher salt and fresh ground pepper shopping list
- Heat oil in heavy large skillet over med-high heat. Add chorizo and cook,breaking up clumps,until dry and crisp,about 10 mins. Using slotted spoon,transfer chorizo to paper-lined plate to absorb oil. shopping list
- Pour off all but 1 Tbs of fat from the pan and heat the pan over med-high heat. shopping list
- Add the onions and boiled potatoes,saute till browned,about 12 mins. Stir in cooked chorizo and season with just a little salth and pepper,to taste. Transfer to serving bowl and serve. shopping list
- *Mexican chorizo is uncooked sausage,made with fresh ground pork and well seasoned with smoked red chilies. They can be found at most supermarkets. Great filling for tacos. Just add shredded cheese,beans or your favorite taco filling. shopping list
