How to make it

  • Cook and stir onion in oil in skillet over medium heat until tender.
  • Stir in remaining ingredients and heat to boiling then reduce heat and cover.
  • Simmer 10 minutes then simmer uncovered stirring occasionally for 5 minutes.

    Would not shed tears if made to eat this eastern beauty of a squash recipe as a kid...Now as a bigger kid,I shall print out and try this delicious coconut enriched dish.

    Thank-you for this very nice recipe,a consumer of quite a bit of this fiber ladened vegetable in the winter.
