Better Than Grandmas Potatoes

- 3 lbs baking potatoes, peeled and cut into chunks shopping list
- 2 1/2 qts chicken broth shopping list
- 4 small carrots, peeled and cut into 1/2 in pieces shopping list
- 1 small onion, chopped shopping list
- 1/4 - 1/2 c butter or margarine (I lean more toward a half cup) shopping list
- 1 tsp dried dill shopping list
- 1 1/2 c sour cream shopping list
- 3 Tbsp chopped fresh parsley (or just shake in some dried parley like I do) shopping list
- 1 tsp salt shopping list
- 1/2 tsp coarse ground pepper shopping list
- 1 Tbsp butter or margarine, melted shopping list
How to make it
- Preheat oven to 325
- Combine potatoes and broth, bring to a boil.
- Reduce heat and simmer 15 mins, add carrot and onion, simmer another 15 - 20 minutes until pots are tender. Drain.
- Combine cooked veggies, butter and dill in a large bowl, mash.
- Add sour cream, parsley, salt and pepper, stirring well.
- Spoon into an 11x7 greased baking dish, dot with melted butter, cover and bake for 1 hour.
