How to make it

  • Preheat oven to 325
  • Combine potatoes and broth, bring to a boil.
  • Reduce heat and simmer 15 mins, add carrot and onion, simmer another 15 - 20 minutes until pots are tender. Drain.
  • Combine cooked veggies, butter and dill in a large bowl, mash.
  • Add sour cream, parsley, salt and pepper, stirring well.
  • Spoon into an 11x7 greased baking dish, dot with melted butter, cover and bake for 1 hour.
