Shamrock Spinach Quiche

- * 10 oz frozen chopped spinach shopping list
- * 4 serving Louis Rich, turkey bacon shopping list
- * 2 tbsp 50/50 butter Blend With extra virgin olive oil shopping list
- * 1 cup Finely Shredded swiss cheese shopping list
- * 1/2 cup onions, Chopped shopping list
- * 1 stlk celery, raw, diced shopping list
- * 1/2 cup Raw Shredded carrots shopping list
- * 2 cloves garlic Clove shopping list
- * 1 tsp ground thyme shopping list
- * 1/2 tsp cayenne pepper shopping list
- * 1 pie crust Pillsbury pie crusts shopping list
- * 1 cup Fat -free cottage cheese shopping list
- * 1 tsp nutmeg, Ground shopping list
- * 1/2 cup egg Beaters shopping list
- * 1 cup Fat Free milk shopping list
How to make it
- Pre-bake the pie shell until partially done as instructed on carton.
- Wrap the bacon in paper towels and cook in microwave on high for 90 seconds. Let drain, cool then dice.
- Sauteé the onion, carrot, garlic and celery in butter until the onion is soft. When the veggies are looking soft and lovely, add the thawed/drained spinach to the pan and mix well. Cook just a bit longer to make sure any extra liquid is cooked off.
- Spread cottage cheese over the bottom of the pastry shell.
- Mix the spinach with the bacon, onion/celery mixture and spread over top of the cottage cheese.
- Sprinkle Swiss cheese over top.
- Combine the eggs, milk, spices and pour over all.
- Bake at 350°F (175°C) 45 minutes.
