How to make it

  • In a small sauce pan, melt butter and blend in flour.
  • Let sit for a minute.
  • Add all of cold milk, stirring with a whisk.
  • Season with salt, cayenne, thyme and nutmeg.
  • Cook sauce on low until smooth and boiling, stirring occasionally with a whisk.
  • Reduce heat and stir in cheese, then remove from heat and continue stirring until sauce is completely smooth.
  • Place one third of the sliced potatoes and half the onions in a lightly greased 1-quart casserole dish.
  • Pour one third of the cheese sauce over potatoes.
  • Repeat with second layer of potatoes, onions and cheese sauce.
  • Finish with a layer of potatoes and the remaining cheese sauce.
  • Sprinkle the remaining grated cheese on top.
  • Top with some paprika for color.
  • Bake uncovered for about 1 ½ hours at 350F, covering part way through cooking if top browns quickly.
  • Test doneness with knife - if any crunchiness or resistance is felt in the potatoes, continue cooking.
  • Alternative: Bake covered for 1 hour the day before serving. On the day of serving, reheat in microwave then put under broiler right before serving (if oven is otherwise employed), or reheat uncovered in oven for 45 minutes. Check for doneness with a knife - continue cooking until no resistance during knife test.
