Super Yum Veggie Soup

- 1 1/2 cups dried small pasta (I used mini bow ties) shopping list
- 2 tablespoons olive oil shopping list
- 1 small onion, diced shopping list
- 2 stalks of celery, chopped shopping list
- 2 carrots, peeled and chopped shopping list
- 1 bell pepper, seeded and chopped shopping list
- 1 medium sized zucchini, chopped shopping list
- 4-6 oz of sliced mushrooms shopping list
- 3-5 oz of spinach shopping list
- 6 oz of fresh green beans, cut into pieces shopping list
- 1 cup frozen peas shopping list
- 1 cup frozen corn shopping list
- 1 14.5 oz can petite diced tomatoes, drained shopping list
- 2 teaspoons crushed garlic shopping list
- 6 cups vegetable broth (or chicken broth if you prefer) shopping list
- salt and pepper to taste shopping list
How to make it
- Cook pasta. Set aside.
- Heat oil in large soup pot.
- Add onion, carrots, celery, and bell pepper to pot.
- Saute over med-high heat for about 5 minutes.
- Add zucchini, mushrooms, spinach, and green beans, and saute until all vegetables are tender.
- Now add the peas, corn, tomatoes, and garlic. Saute for a few more minutes.
- Add the broth and bring to a boil for 5 minutes.
- Season with salt and pepper to taste.
