Ingredients

How to make it

  • Cook pasta. Set aside.
  • Heat oil in large soup pot.
  • Add onion, carrots, celery, and bell pepper to pot.
  • Saute over med-high heat for about 5 minutes.
  • Add zucchini, mushrooms, spinach, and green beans, and saute until all vegetables are tender.
  • Now add the peas, corn, tomatoes, and garlic. Saute for a few more minutes.
  • Add the broth and bring to a boil for 5 minutes.
  • Season with salt and pepper to taste.

    I have some ribbon pasta on my baker's rack just waiting for this one. That is one of my favorite shapes.

    Have you ever tried piccolini pasta? I bought some mini-piccolini and it makes the best macaroni and cheese.
