How to make it

  • Dredge chicken in flour,shaking off excess.
  • Brown chicken on both sides in hot oil in saute pan over med-high heat,about 8-10 mins. Transfer chicken to a 4 to 6 qt. slow cooker.
  • Deglaze saute pan with wine,cooking until liquid is reduced by half. Transfer wine mixture to slow cooker.
  • Add whole and crushed tomatoes,onion,mushrooks,garlic,Italian seasoning and anchovy paste to the slow cooker.
  • Cover cacciatore;cook till chicken is tender,on low heat setting for 3 1/2 to 4 1/2 hours. Add bell pepper,cover,and cook until pepper is tender,30 mins more. Serve over pasta. Garnish with oregano and Parmesan cheese.

    Agreed. Glad you've tried it the other way. Do I cook to eat or eat so I'll have an excuse to cook? Some days one and some days the other. As I said before; this should be delicious.

    Thanks for the post Pleclare. As far as slow cooker Cacciatore goes this is as good a recipe as I've seen and should be delicious. However, I'm sorta traditional about Cacciatore and don't want my chicken all cooked to death.Cacciatore is really two things, fried chicken and a marinara sauce and they are put together shortly before they are served to cote and enliven the chicken.Try it that way sometime and see if you don't notice the difference. RJ
