Ingredients
  • 4 medium poblano peppers
  • 1/3 pound ground beef
  • 1/4 cup rice
  • 2 medium size onions finely chopped
  • 1/2 bunch parsley chopped
  • 1/2 bunch fresh dill chopped
  • 1 tablespoon chopped fresh mint
  • 3 tomatoes petite diced
  • 1 tablespoon tomato paste
  • 1 teaspoon freshly ground black pepper
  • 1-1/2 teaspoons salt
  • 2 tablespoons butter
  • 1-1/2 cups hot water
  • 1 tomato sliced

Directions
  1. Wash peppers then cut the top parts off and clean inside.
  2. Mix ground meat, rice, onion, parsley, dill, mint, black pepper, salt and tomatoes.
  3. Stuff poblanos with the mix and seal the top with a slice of tomato.
  4. Place them in a broad pot and pour hot water on poblanos.
  5. Cut butter into small pieces and place on top of poblanos.
  6. Cook on medium for 45 minutes.
  7. Serve immediately.

This lookd great. I love the idea of using mint not only because I have tons growing in the yard but it should make an interest flavor profile.

I recently roasted and stuffed "Hatch" chilis (from Hatch New Mexico) that were fabulous.


I love Hatch Chili peppers. They are so tasty.


Interesting ingredients. Mint and dill. What no cheese?
