How to make it

  • Prepare waffle iron with non-stick butter flavored cooking spray
  • Separate eggs, putting whites in one bowl and yolks in a larger bowl. Beat yolks add milk, mashed potatoes and butter. Mix dry ingredients and add to egg-milk mixture. Beat gently until smooth.
  • Whites; beat until stiff. Fold in the batter. Heat waffle iron to the manufacturer's directions.
  • Spray the waffle iron with non-stick cooking spray. Pour batter into the center of the waffle iorn close and cook till golden brown. Yield: about 4 for the large waffle iron and 6 for the small waffle iron.
