How to make it

  • 1. Combine flour, sugar, baking soda, baking powder, and salt. Cut butter into flour mixture with pastry cutter. Add buttermilk until dough is soft. Stir in currants.
  • 2. Turn dough out onto a lightly floured surface. Knead for 5 minutes, or until smooth. Form dough into a 7 inch round. Place on a lightly oiled cake pan or cookie sheet. Cut 1/2 inch deep cross side to side. Score with cross 1/2 inch deep on the top.
  • 3. Bake in a preheated 375 degrees F (190 degrees C) oven for 40 minutes.
  • Makes 1 round loaf

    This was fantastic and made a great addition to our St. Patrick's Day dinner! When it first came out ouf the oven, the crust was a little crunchy for my taste, but it softened up after sitting covered overnight and tasted like a great big scone with our morning coffee. I would suggest adding the buttermilk a little at a time in case you don't need it all. I had a tad left that would have made the dough too soft to knead if I had added it all, and I didn't want to add too much extra flour and have the finished bread too dry. Instead of oiling the baking sheet, I lined it with parchment paper so the bottom of the bread didn't get too dark and for easier clean-up. I especially like that the ingredient list is posted in the order in which the ingredients are used, so I didn't have to hunt for ingredients and amounts while mixing up the dough. Thanks for the recipe, Rescue_ranger! I can definitely see making this to have with our morning coffee all year long instead of just once a year.
