Puffed Tortilla Mexican Salad

- 1/2 pound lean ground beef shopping list
- 1 tsp. onion flakes shopping list
- 1/4 cup kidney beans shopping list
- 1/4 cup enchilada sauce shopping list
- 1/2 cup puréed canned tomatoes shopping list
- 2 spinach tortilla 8 inch diameter shopping list
- leafy lettuce, two large leaves shopping list
- 1/4 cup shredded cheese shopping list
- small tomato, wedged for garnish shopping list
- black olives, optional shopping list
- salsa shopping list
How to make it
- Cook ground beef over medium heat until done & drain.
- Put tortillas in oven, then preheat to 275. Letting them remain there as you..
- Return drained meat to pan, adding onion, beans, sauce, puréed tomatoes, and heating through...reducing liquid by about 1/3
- Remove now puffy tortillas to serving plate and top with lettuce leaf, meat mixture, tomato wedges, black olives, cheese.
- Serve with Salsa on the side.
