Irish St Patricks Day Drop Cookies

- 2 eggs shopping list
- 3/4 cup granulated sugar shopping list
- 2/3 cup vegetable oil - I have also used melted butter shopping list
- 2 Tbsp. plain or vanilla yogurt shopping list
- 2 teaspoons vanilla extract OR instead of vanilla, Cream de Menthe then omit the green food colouring. shopping list
- a quick spot of green food colouring shopping list
- 1 teaspoon lemon peel, grated shopping list
- 2 cups all-purpose flour shopping list
- 2 teaspoons baking powder shopping list
- 1/2 teaspoon salt shopping list
- additional sugar or coloured sugar shopping list
How to make it
- In a large bowl, beat the eggs, sugar, vegetable oil or melted butter, yogurt, vanilla and lemon peel until blended. This is when I like to add a tiny drop of green food colouring.
- Combine the flour, baking powder and salt then gradually beat into egg mixture.
- Drop by rounded teaspoonfuls 2 inches apart onto greased baking sheets.
- Flatten with a glass dipped in sugar.
- Bake at 350 degrees for 8-10 minutes or until edges are lightly browned.
- Cool for 2 minutes before removing to wire racks to cool completely.
