Ingredients
  • 250ml oil for deep-frying
  • 500g of chicken thighs, cut into pieces
  • 2 tbsp curry leaves
  • Marinade:
  • 1tsp light soya sauce
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp sesame oil
  • 1 tbsp corn flour
  • Seasoning:
  • 1/2tbsp oyster sauce
  • 1tbsp light soya sauce
  • 1tbp sugar
  • dash of chicken stock granules
  • 100ml water

Directions
  1. Combine chicken with marinade and marinate for 1 hour.
  2. Deep-fry in hot oil for 5 minutes and drain.
  3. Heat up 2tbsp oil and saute curry leaves until fragrant.
  4. Add in chicken, seasoning and stir-fry at high heat until dry.
  5. Serve and enjoy.
  6. Tip: Curry leaves can be added more for stronger flavor. Also, you can add a dash or two of Chinese cooking wine in the marinade for the mellow taste.
