Sweet Potato And Lemongrass Soup Recipe

Ingredients

How to make it

  • Place all ingredients except sweet potatoes & stock in food processor blitz to a paste
  • Fry paste in a little oil until fragrant
  • Add sweet potatoes
  • Continue to cook for about 5 mins
  • Add stock
  • Bring to boil
  • simmer for about 90 mins
  • Whizz in the blender until smooth
  • Reheat season to taste

    I am dying to try this recipe, it sounds heavenly. One question: when you say "lemongrass, prepared," does that just mean "chop off the woody ends and the roots," or is there more to it than that? Thanks.
