How to make it

  • Sorry about the imperial/metric measurements
  • Whizz amaretti & digestive biscuits together
  • pour in melted butter while machine is still on
  • Dip biscuit base onto 9 1/2 inch cake tin
  • Press down with back of spoon
  • Chill base in fridge
  • put all ingredients in food processor
  • pulse a few times until mixture comes together
  • Be careful not to overmix
  • Pour onto chilled base
  • Bake for 1 hr
  • Cheesecake will probably be a bit wobbly
  • Place cheesecake in fridge to continue to set
