Mango And Amaretti Cheesecake

- Base shopping list
- 4oz amaretti biscuits shopping list
- 4oz digestive biscuits shopping list
- 6 oz melted butter shopping list
- Filling shopping list
- 2 x 400g tinned mango pulp shopping list
- juice of 1 lemon shopping list
- 6 tbsps caster sugar shopping list
- 250ml double cream whipped to soft peak shopping list
- 3 eggs beaten shopping list
- 250g mascarpone shopping list
How to make it
- Sorry about the imperial/metric measurements
- Whizz amaretti & digestive biscuits together
- pour in melted butter while machine is still on
- Dip biscuit base onto 9 1/2 inch cake tin
- Press down with back of spoon
- Chill base in fridge
- put all ingredients in food processor
- pulse a few times until mixture comes together
- Be careful not to overmix
- Pour onto chilled base
- Bake for 1 hr
- Cheesecake will probably be a bit wobbly
- Place cheesecake in fridge to continue to set
