Vegetarian curry frittata

- 1 beaten egg shopping list
- 1 tablespoon rice flour shopping list
- 1/2 cup soy milk shopping list
- 1/2 cup water shopping list
- Mix these together and leave to thicken shopping list
- 6 ring slices of leek shopping list
- 1/2 cup white celery sticks - chopped small shopping list
- 1/2 cup carrots - medium grated shopping list
- 5 button mushrooms - sliced shopping list
- 1/4 vegetable cube - crushed shopping list
- 1/2 teaspoon curry (mild, med or hot) shopping list
- 2 rice cakes broken into thumbsize pieces shopping list
- 1 tablespoon olive oil for frying shopping list
How to make it
- Heat the oil in a 28cm frying pan
- Add onion and stir until wilted
- Add the celery - stir for a couple of minutes
- Add the crushed vegetable cube - stir
- Add the curry - stir
- Add carrots, mushrooms - stir couple of minutes
- Mix the prepared egg mixture as the rice flour settles at the bottom.
- Pour evenly over the entire dish.
- Put a lid on so that the heat cooks the top of frittata.
- Turn down the heat to slowly cook for approx 3 mins or until the top is jelly like.
- Turn off the heat and let it cook for another minute.
- Take the lid off and replace with a warm serving plate. Turn upside down and voila enjoy:)
