Cornmeal Ribbons

- 2/3 c. butter, room temp. shopping list
- 2/3 c.sugar shopping list
- 1 tsp.baking powder shopping list
- 1/4 tsp. salt shopping list
- 1 egg shopping list
- 1 1/2 tsp.lemon zest, fine shopping list
- 1 tsp. vanilla shopping list
- 1/2 c. cornmeal shopping list
- 1 1/2 c. flour shopping list
- for glaze: shopping list
- 1 1/2 c. powdered sugar shopping list
- 2 tsps. lemon juice shopping list
- enough milk to make a glaze of spreading consistancy shopping list
- food coloring of your choice shopping list
How to make it
- Preheat oven to 375
- beat butter on high speed for 30 sec.
- add sugar, baking powder, salt, beat til combined
- beat in lemon peel, egg, and vanilla
- add cornmeal and flour, mix well
- if you can't beat in all the flour, mix the rest in by hand
- divide dough in half, wrap each half in wax paper or plastic wrap
- chill about 3 hours or until dough is stiff enough to handle easily
- roll out 1 half of the dough on a lightly floured surface, to a 10x8 in. rectangle, trim the edges with a pastry wheel(or a pizza cutter)
- cut crosswise into 1 1/4 in. wide strips.
- place strips 1 inch apart on an ungreased cookie sheet
- bake for 7-8 minutes or until the edges are lightly browned
- any darker and they will be crispy
- cool on a wire rack, repeat steps with the other half of the dough
- frost with the glaze, sprinkle with sugar if desired, i recommend doing this, it's quite pretty.
