How to make it

  • Heat the water in a non-stick pan and add the salt and oil.
  • When the water starts to boil, pour the cornmeal all at once and start stirring with the tail end of a long wooden spoon. The cornmeal will begin to bubble, turn the heat down and continue stirring to prevent lumps.
  • The mamaliga will be ready in 8-10 minutes. To test, wet the tail end of a wooden spoon with water and insert it into the mixture. When it comes out clean, it is ready.
  • How firm the Mamaliga is depends on how much cornmeal you use and how long you cook it.
  • Serve with sour cream or feta cheese on top.

    Traditionally it is served as a side to stews - so you sop up the sauce with mamaliga instead of bread. I don't see why you couldn't add your favorite fresh herb. We eat the dried out leftovers the next day with some warmed milk.

    wow i have never Ever EVER heard of this (mind you i am new to the cooking world lol) but it sounds so good!!! can you add herbs to it or not really? cheers thanks for introducing me to something new!!!
