Pork Tenderloin With Mustard And Thyme Recipe
This is a very moist and very tasty pork tenderloin good enough to serve company. I like to serve this with horseradish mashed potatoes and the tomatoes with blue cheese I posted earlier tonight.

Ingredients
  • 2 pounds pork tenderloin
  • 1/2 cup whole grain mustard
  • 4 large garlic cloves crushed
  • 2 tablespoons dried thyme
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons balsamic vinegar
  • 1/4 cup dry red wine
  • 2 tablespoons olive oil

Directions
  1. Remove fat from the tenderloins then wash and dry well.
  2. Cut off each tip and reserve.
  3. Cut remaining tenderloins into 1-inch-thick slices.
  4. Combine mustard, garlic, thyme, pepper, vinegar, red wine and oil in a large bowl.
  5. Marinate overnight or at least 1 hour in the refrigerator turning occasionally.
  6. To serve allow meat to sit at room temperature for 30 minutes.
  7. Remove from the marinade then prepare broiler.
  8. Broil pork tenderloin pieces on both sides for 7 minutes brushing with marinade.
