How to make it

  • Follow directions on package for lentils. Add the chicken boullion cube to water with lentils.
  • Remove casing and cook chorizo until brown, about 10-15 minutes. Set aside in bowl.
  • In same pan lightly fry bacon for about 10 minutes, do not over cook it you want soft chewy bacon. Save juices in pan. Set bacon aside on cutting board and chop into small peices.
  • Add all chopped ingredients into same pan except cilantro. Mash all ingredients until smooth, about 5 minutes. Add cilantro last minute, and mash again. Place mixture into blender with 1/2 cup water and blend until smooth.
  • Pour mixture into the pot of lentils along with cumin. Stir to combine. Add chorizo and bacon to lentils also, stir again and remove from heat.
  • Dish into bowls and top with cojita cheese, sour cream. Serve tortillas with it.

    Thanks for the post. This dish is very common in rural Mexico; except they use salt pork rather than bacon and just chop things very fine as no blender. It's good food. Also, this recipe works with pinto beans or split peas. The split pea version is super yummy. RJ
