Veg Sushi Salad

- 1 1/2 cup short grain white or brown rice shopping list
- 1/4 cup rice vinegar shopping list
- dash sugar shopping list
- 1 1/2 tsp salt shopping list
- 4 to 6 cups lettuce shopping list
- 1/4 cup shredded carrot shopping list
- 1 cucumber cut into thin strips shopping list
- 2 scallions finely chopped shopping list
- 1 avocado, peeled and chopped shopping list
- 2 sheets nori, cut into 1/2 x 1/2 inch squares shopping list
- 1 Tbs seseme seeds shopping list
- Dressing: shopping list
- 2 tsp wasabi powder shopping list
- dashes of hot water shopping list
- 2 Tbs soy or tamari sauce shopping list
- 2 Tbs olive oil shopping list
- splash of rice wine vinegar shopping list
How to make it
- Cook rice per pkg directions
- While rice is still hot, add 1/4 cup of the vinegar, sugar and salt to taste and chill to cool
- Make dressing: in small bowl combine wasabi with hot water to make a paste
- Add in soy sauce and stir to dissolve
- Add a bit of olive oil and splace of rice wine vinegar
- Asemble: layer in individual bowls: lettuce, rice, carrots, cucumbers, scallions, avocado, nori and seseme seeds
- Spoon dressing over the top
- Note: for seafood lovers one may top with fresh cooked crab or shushi grqade tuna etc
