Braised Beef

- 2 Tablespoons oil shopping list
- 3 Pound beef rolled rump roast shopping list
- 1/2 Cup water shopping list
- 1 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
- 1 Envelope unflavored gelatin shopping list
- 2 Tablespoons Cold water shopping list
- 1 teaspoon instant beef bouillon shopping list
- 1 Cup red wine shopping list
- For the Marinated Vegetables: shopping list
- 1 1/4 Pound baby carrots shopping list
- 1 Pound green beans shopping list
- 1 Can Whole onion,drained shopping list
- 2/3 Cup oil shopping list
- 1/3 Cup red wine vinegar shopping list
- 2 cloves garlic,finely chopped shopping list
- 2 teaspoon salt shopping list
- 1/8 teaspoon fresh ground pepper shopping list
How to make it
- For Braised Beef:
- Heat oil in ducth oven until hot.
- Cook beef on all sides until brown.
- Add water,salt and pepper.
- Cover and cook in a 325 degree oven for about 1 1/2 hours or until tender,cool slightly.
- Cover and refrigerate beef and broth separately at least 8 hours.
- Sprinkle gelatin over the 2 tablespoons water in pan.
- Stir in bouillon and wine,
- Cook over medium heat,stirring all the while until gelatin is dissolved.
- Skim fat from broth,add enough cold water to broth to measure 1 cup.
- Stir into gelatin mixture.
- Place pan with gelatin mixture in bowl of ice and water,stir until mixture begins to thicken,about 10 minutes.
- Cut string from beef,trim fat.
- Cut beef into very thin slices,and arrange on large platter.
- Coat entire surface of beef with small amount of gelatin mixture.
- Pour any remaining mixture into loaf dish...9x5x3.
- Cover and refrigerate beef and gelatin mixture no longer then 24 hours.
- For the Marinated Vegetables:
- Cook carrots and green beans in separate pans in about one inch of salted water until both are tender,about 20 minutes for green beans and about 25 minutes for carrots,drain.
- Arrange cooked vegetables and onion in separate sections in shallow glass dish.
- Shake remaining ingredients in covered jar,pour over vegetables.Cover and refrigerate,for about 2 hours.
- Arrange vegetables around beef.Cut aspic in loaf dish into small diamonds and squares,arrange around beef and serve separately.
- ~ Not many people like this Cold Beef with Aspic,I know I curled my nose the first time I was presented with such,but, have enjoyed it a great deal in these many years after being introduced to this chilled beef~
