How to make it

  • Pre-heat oven to 500F
  • prepare the dough into the desired shape or if using a bread shell get it out.
  • Evenly coat the dough/shell with olive oil
  • Key to success, using a very sharp knife cut the onion into rings that are paper thin. (this is key!) Maui onions are almost as good as Vidalia. Set the onion aside.
  • Sprinkle 1/2 to 2/3 of the cheese on dough (should be very sparse coverage)
  • Arrange the salmon carefully, should be a single, even layer
  • Arrange the onion in a single layer on top of the salmon
  • Crush the anise with a mortar and pestel. Add just the slightest amount on top. You can omit this if desired.
  • Put remaining cheese evenly on top
  • Place on baking stone and immediately reduce heat to 400F, cook for about 10min.
  • When I make this I only put the anise on half as that's what the family likes.
