How to make it

  • Pre-heat oven to 410F
  • Sift the flour into a large bowl & stir in sunflower & poppy seeds
  • Into the centre well of this mix - add and fold in the liquids gently - eggs, milk, melted butter-margarine, crushed/mashed mandarin including its juice.
  • Add the choc chips and prunes and fold in just enough so these are evenly mixed. Don't over mix - the batter should be lumpy.
  • Spoon the mixture into an oiled loaf tin
  • Bake in preheated oven (1/3rd way down in the oven ) for 35 -40 minutes, at 410F until cake is medium to deep golden brown.
  • Transfer onto a wire rack to cool. Enjoy:)
