Light And Crispy Asparagus Quiche

- 1 lb asparagus,ends snapped off and discarded,stalks cut in 1" lengths shopping list
- 4 to 5 green onions,trimmed,sliced thin shopping list
- 1 Tbs olive oil shopping list
- salt and pepper shopping list
- 1 sheet(half of 17.3 oz box) puff pastry,thawed shopping list
- 3 large eggs shopping list
- 3/4 c evaporated milk shopping list
- 1/2 c (4oz.) sour cream shopping list
- 1/2 tsp dried tarragon shopping list
- 1-1/2 cups grated swiss cheese shopping list
How to make it
- Adjust oven racks to lowest and upper-middle positions and heat oven to 400 degrees.
- Toss asparagus and green onions with olive oil and generous sprinkling of salt and pepper.
- Roll pastry on lightly floured surface into 11x16" rectangle. Fit into jelly roll pan,making sure pastry is not stretched. Evenly distribute asparagus mixture over pastrt. Bake on lowest oven rack till golden brown,12 to 15 mins. Reduce oven temperature to 300 degrees;remove pastry from oven.
- Whick eggs,milk,sour cream,tarragon and 1/2 tsp ea. salt and pepper. Pour egg mixture evenly over crust and sprinkle with cheese.
- Put quiche on upper-middle rack;bake until filling is just set 20-25 mins. Turn on broiler;broil until cheese bubbles,about 2 mins.
- Remove,let quiche rest a few minutes,then cut and serve.

This sounds delicious, but don't faint, I've never used puff pastry. Don't even know where to find it - I'm assuming the dairy case. ;')
