I love eggs and I'd choose eggs over anything anytime of the day. I can have scramble eggs for breakfast, lunch, dinner and supper. This is a Chinese egg dish that I absolutely love and is relatively easy to make. No fuss and quick.

Ingredients
  • 3 large eggs
  • 1 tsp oyster sauce
  • 3 drops of fish sauce
  • 2 dashes of white pepper powder
  • 1/4 tsp sesame oil
  • 1 tsp of Chinese cooking wine (Shaoxing cooking wine)
  • 1/2 red onions cut into rings and then cut the rings into half.
  • 5 shrimps peeled and deveined
  • 1 stalk chopped scallions

Directions
  1. Beat the eggs with a fork. Add all the seasoning, shrimps, chopped scallion and mix well.
  2. Heat up the wok and add some cooking oil.
  3. Saute onions until aromatic or until they turn lightly caramelized.
  4. Add in the beaten eggs and keep stirring.
  5. Cook the omelet until it's slightly burned.
  6. Serve hot.
  7. TIPS: You can substitute the shrimps with crab meat or have no seafood at all. It taste good on its own with onion.
